Assam, a lesser-known state in Northeast India, has a culinary tradition that is vastly different yet incredibly flavorful and approachable.
It's a cuisine of contrasts—fresh and fermented, hearty and delicate, tangy and mellow. You’ll find mustard oil, black sesame, rice in many forms, along with seasonal vegetables, river fish, and minimalism in spicing. It's not flashy—but it’s deeply flavorful, comforting, and full of heart.
